BLAINE, Minn. – (Aug. 17, 2017) – In a few short months, Blaine will have its very own brewery. Invictus Brewing Co. broke ground this week near the National Sports Center on 105th Avenue. It has been a long road to get to this point for the Invictus investment team so there are thrilled to get to work on their building.
“For us to be able to get to this day with all the delays and challenges that we had in the last three years, it’s emotional. We’ve worked really hard to get to this point, so it’s exciting, it’s scary, it’s crazy, it’s everything,” said Previn Solberg of Invictus Brewing Co.
Construction will ramp up in the next couple of weeks and the building should be complete before the end of the year.
“Construction timeline is 140 days, so hopefully we’ll be able to be done with the building and equipment and everything, I am hoping by the end of December, in terms of actually opening our doors, we will hope to be open sometime in February,” said Solberg.
February might be a bit optimistic with the extensivel license process that they will need to go through once the brewery is complete. Once open they hope that this brewery will be the right fit for the area.
“We are hoping that it’s going to be the right fit, the right feel for the National Sports Center, for the city of Blaine, for our community, for our kids. I know people don’t always think of a brewery being a kid friendly place, but that’s what we intend. We want to have a place where we can bring our kids. I have an 8 and 10-year-old, and we want to make sure that they could come in and eat and have fun in a safe and fun environment,” said Solberg.
They plan to start with four beers on tap and will be able to grow to as many as 20 different options. The investment group will soon be hiring a taproom manager to run operations and a brew master to handle brewing duties. An onsite restaurant called the Tipsy Steer will provide food for brewery guests.
