BLAINE, Minn. – (March 22, 2018) – A highly anticipated business in Blaine is getting closer to opening. When more than 100 people show up for your ground breaking, you know the community is eager for you to start building. That was the case last summer for Invictus Brewing Company. Now, after many months of construction the brewery is getting close to opening its doors.
“I’m very pleased with the quality of the construction and how things are progressing at this point and everybody’s in here working hard just trying to get this thing open so we can brew some beer,” said Co-owner Previn Solberg.
Invictus recently hired Bradley Zimmerman as its head brewer. This will be the fourth time Bradley has helped launch a new brewery. He was excited to move to the area, as the Twin Cities is a place his family would like to put down roots. He will soon be able to start brewing and will have four beers ready by the grand opening.
“We’re kind of playing it safe to start with, just trying to appeal to everyone, so we’re going to open with an amber, American robust porter, blonde ale with lemon peel and honey and then an IPA,” Zimmerman said.
When is Invictus going to open? That is the question Solberg gets all the time. Baring any major setback he believes the beer will be flowing in the near future.
“Well, our goal right now is to be brewing by April 2, that’s our goal, that’s what we’re pushing everybody towards, which is basically ten, eleven days, if we can pull that off, which, fingers crossed, we can do it, we should be able to have our soft opening on April 27 and 28 and then open to the general public the following week or weekend,” Solberg said. “That’s all tentative right now, nothing is committed to, once we brew we’ll know but until we get to that point. everything’s up in the air and that’s the frustrating part of the process, I know that the public is frustrated too because they want to drink beer but it’s just how it goes when you’re doing something new like this”
It appears you will have to wait just a few more weeks to taste the beer from Blaine’s first brewery.
