FRIDLEY, Minn. – (June 9, 2016) – A new initiative is getting more people cooking in their kitchens and spending time outside – specifically, adults with serious and persistent mental illness. A Happy, Healthy & Fit Challenge at Bridgeview, a local drop-in center, is encouraging people to learn about dance, yoga, healthy eating and more. “The whole purpose of today’s meal is to do what’s called cooking light Italian,” said Anoka County Attorney Tony Palumbo as he shared his love of cooking with the group. The menu for the day featured a salad, pasta with shrimp and asparagus, baked cod, and even some strawberries with a ricotta cream. The chefs taught some new culinary skills, while introducing healthy foods that might be new to some people. After cooking together, everyone was able to share in the meal they had prepared.
